Centuries ago, man discovered that removing moisture from food helped to preserve it, and that the easiest way to do this was to expose the food to sun and wind. Nowadays most foods are dried mechanically; the conventional method of such dehydration is to put food in chambers through which hot air is blown at temperatures of about 110°C  at entry to about 45°C at exit. This is the usual method for drying such things as vegetables, minced meat, and fish.
Liquids such as milk, coffee, tea, soups and eggs may be dried by pouring them over a heated horizontal steel cylinder or by spraying them into a chamber through which a current of hot air passes. In the first case, the dried material is scraped off the roller as a thin film which is then broken up into small, though still relatively coarse flakes. In the second process it falls to the bottom of the chamber as a fine powder. Where recognizable pieces of meat and vegetables are required, as in soup, the ingredients are dried separately and then mixed.
Dried foods take up less room and weigh less than the same food packed in cans or frozen, and they do not need to be stored in special conditions. For these reasons they are invaluable to climbers, explorers and soldiers
in battle, who have little storage space. They are also popular with housewives because it takes so little time to cook them.

Any list of the greatest thinkers in history contains the name of the brilliant physicist Albert Einstein. His theories of relativity led to entirely new ways of thinking about time, space, matter, energy, and gravity. Einstein's work led to such scientific advances as the control of atomic energy, even television as a practical application of Einstein's work.
In 1902 Einstein became an examiner in the Swiss patent office at Bern. In 1905, at age 26, he published the first of five major research papers. The first one provided a theory explaining Brownian movement, the zig-zag motion of microscopic particles in suspension. The second paper laid the foundation for the photon, or quantum, theory of light. In it he proposed that light is composed of separate packets of energy, called quanta or photons, that have some of the properties of particles and some of the properties of waves. A third paper contained the "special theory of relativity" which showed that time and motion are relative to the observer, if the speed of light is constant and the natural laws are the same everywhere in the universe.             Even before the turn of the century, movies began to develop in two major directions: the realistic and the formalistic. Realism and formalism are merely general, rather than absolute, terms. When used to suggest a tendency toward either popularity, such labels can be helpful, but in the end they are still just labels. Few films are exclusively formalist in style, and fewer yet are completely realist. There is also an important difference between realism and reality, although this distinction is often forgotten. Realism is a particular style, whereas physical reality is the source of all the raw materials of film, both realistic and formalistic. Virtually all movie directors go to the photographable world of their subject matter, but what they do with this material - how they shape and manipulate it - determines their stylistic emphasis.
            Generally speaking, realistic films attempt to reproduce the surface of concrete reality with a minimum of distortion. In photographing objects and events, the filmmaker tries to suggest the copiousness of life itself. Both realist and formalist film directors must select (and hence emphasize).

Realists, in short, try to preserve the illusion that their film world is not manipulated, an objective mirror of the : actual world. Formalists, on the other hand, make no such pretense. A high premium is placed on simplicity, spontaneity, and directness. This is not to suggest that these movies -lack artistry, however, for at its best the realistic cinema specializes in art that conceals art.
