Step 1: Prepare ingredients

- You buy crabs with meat, wash especially the carapace and crab bibs and then boil them.
- When the crab is cooked, leave it to cool and then remove the crab meat and put it in a separate bowl.
- Shrimp you wash, peel, remove the feces at the head and back and then cut into small pieces. Quail eggs are also washed, boiled and peeled.
- Mushrooms are soaked in warm water until soft, then washed several times with water to remove dirt and then finely chopped.
- Separate your eggs from the yolk, season with a little seasoning and beat well. Tapioca starch you mix with filtered water, stir well to dissolve the powder in water to form a mixture of moderate consistency.
Step 2: Make soup
After about 45 minutes, you take out the pork bones, decant the clear water so that when cooking the soup, it has a sweet taste.
– Bring the pot of bone broth back to a boil, add corn and peas, cook until soft.
– Next, you put shredded crab meat, shrimp, shiitake mushrooms and quail eggs into the pot and season with salt, main noodles, sugar, and fish sauce to taste. Stir well, cover, wait for the pot of soup to boil again, then turn down the heat.
Step 3: Done
