This dish is called Nem Ran by the Northern people and Cha Gio by the Southern people. In Hanoi, the birth of Nem Ran has existed since Cha Ca did not exist. Although classified as a specialty dish of Vietnam, Nem Ran is very easy to prepare. Therefore, it has long become a favorite dish in special occasions such as Tet and other family holidays.
Ingredients for making Nem Ran include minced lean pork, shelled crab or shrimp, two types of edible mushrooms (Nam Huong and Moc Nhi), dried onions, duck eggs, pepper, salt and spices. Everything is mixed well before being rolled with rice paper into small rolls and then fried in hot oil.
